What are olives?

Simply put, olives are the little fruits that grow on the olive tree. They have a small pit in the middle and fleshy fruit. Some say there are at least 2000 different varieties of olives in the world ranging in colour, taste and size. This mix includes kalamata olives which are firm with a rich flavour. They’re a typical table olive and are great in a salad. This mix also includes manzanilla olives which are round and juicy, originating from Spain. The Ligurian olives are small and range from green to black in colour with a citrus herbaceous and nutty flavour, whilst the Arbequinas are crispy with a peppery finish.

How to preserve olives?

Mount Zero Olives preserve using the Greek style way. The olives are hand-picked and brine-cured, before being fermentation in water, salt and a splash of vinegar. Whilst this method is time-consuming and labour intensive, it guarantees a superior flavour and natural colour to their olives.

What to do with olives?

Olives are delicious eaten straight from the jar, to accompany a cheese and charcuterie platter, in a fresh garden salad or even used in cooking. You can bake olives in the oven with a meat or fish dish, add them to sauces, or on top of pizzas.

How to store olives?

You should keep your jar of olives in a dark, cool place but transfer to the fridge as soon as you’ve opened them.
