What is chorizo?

Chorizo is a delicious type of seasoned pork sausage that is often a little spicy. Most often it’s heavily seasoned with paprika (either sweet or hot), but you can also find versions with chilli and garlic for a good kick of flavour. Originally, this tasty sausage is thought to have come from Catalonia but is now popular in Mexico, Portugal and South American cooking. You can find chorizo raw or smoked and it’s commonly used in Spanish and Mexican cooking. In the Argentinian kitchen, chorizo is a fresh or raw sausage that you need to cook. 

How to cook chorizo? 

To cook chorizo, start by removing the casing of the sausage. You can then cook in a frying pan for five to six minutes until crispy and delicious. You won’t need to use any oil either as it will release its own fat whilst cooking. Before cooking your chorizo, it can last in the fridge for up to two weeks. Once cooked, it will last for a week in the refrigerator.

There are so many delicious ways to enjoy chorizo. The easiest way is cooking and adding to a charcuterie board with a handful of other tasty snacks.  A classic way to liven up your weekend breakfast of fried eggs is to serve them alongside slices of crispy chorizo. Or get more creative and whip up a Mexican-style breakfast with scrambled eggs and chorizo in freshly cooked tortillas. Another favourite way for enjoying this sausage is to make chorizo pasta. It is especially delicious in a creamy garlicky tomato based sauce! However, the options are endless really.
