What is chicken kiev?

Chicken kiev is a crumbed free range chicken breast with garlic butter hidden inside. The chicken is coated with egg and breadcrumbs. This classic dish dates back to at least the 18th century, but is perhaps even older. It’s not quite clear where the dish was created but it’s likely to have been in France where Russian chefs took the recipe back home and adapted it.

How to cook chicken kiev?

To cook chicken kiev you can either pan-fry and then bake, or skip the first step and just bake in a hot oven. If you’re wanting a crispy, golden, crunchy exterior then we say pan-fry them in some olive oil first. Once they’re golden and crispy, transfer to a baking dish and put in a hot oven at 180C for 35 minutes or until cooked through.

How to make chicken kiev?

Chicken kiev are made with a boneless fillet of chicken wrapped around butter. Butter is often combined with garlic and herbs and moulded into a little roll-like shape. A deep pocket is cut into the chicken from the thicker side and the butter is placed inside. The chicken is then coated in egg wash and breadcrumbs and chilled before cooking.
